Imi place ceea ce fac si poate din acest motiv imi ies preparatele CA LA CARTE,
deci va vor iesi si voua cu siguranta.
Reteta e veche, o am de la bunica mea, care nu mai este de mult printre noi.
I-am furat-o cand ii tineam ligheanul la framantat.
Eu folosesc pentru DOI COZONACI urmatoarele ingrediente:
INGREDIENTE ALUAT
- 1kg faina (folosesc DOBROGEA pentru cozonac)
- 50g drojdie (pachetel galben BUDAFOK)
- 250g zahar
- 500ml lapte de 3,5% grasime - uneori mai adaug inca doua-trei linguri,
daca simt ca alualtul este prea vartos, ideal este sa fie spre moale
- 200g grasime, ulei si unt topit
- 5 galbenusuri
- 1 lingurita rasa de sare
- arome - coaja rasa de lamaie, portocala, esenta de rom, vanilie, fiecare dupa gust
UMPLUTURI
- crema de mac, din mac macinat, fiert in lapte cu zahar si vanilie
- sau rahat
- sau nuca
- sau...ce va place
PREPARARE
- intr-un castron mai mare cern restul de faina, de doua ori, asa, ca sa fie faina mai pufoasa
- incalzesc laptele in care dizolv zaharul si vanilia
- MAIAUA, draga de ea, o fac din drojdie cu putina faina si cateva linguri
din laptele preparat deja, care nu trebuie sa fie fierbinte
- presar cu duhu' blandetii peste maia o mana de faina si o las la loc cald,
vreme 10-15 minute, ca sa creasca, pana se "crapa faina"
- galbenusurile le frec cu sare, coaja de lamaie si portocala

- amestec cu mana si incep sa framant usurel,
ajutandu-ma de grasimea care trebuie sa fie calduta
- pe masura ce aluatul se leaga, inmoi mana in grasime,
nu o torn in aluat, pana ce o incorporez pe toata
- framant bine, vreme de 30 minute, impaturind aluatul, laundu-l la pumni si cand se supara,
il iau in mana si apoi il trantesc de castron, pana ii trece
- acopar castronul cu un servet si il pun la crescut, in loc cald si ferit de curent,
cam o ora si jumatate
E VREMEA SA-I MODELEZ
- iau aluatul crescut si il impart in doua pentru cei doi cozonaci
- mai impart fiecare jumatate iar in doua
- intind doua foi pe o pelicula fina de ulei
- le pun umplutura si ...
...ii rulez
- apoi impletesc cate doua
- ii mai las in tavi la crescut, vreme de 40 minute
- ii ung cu galbenus de ou amestecat cu lapte, sa le dau o fata faina
- ii mai presar cu zahar, mac sau susan
AMU', HAI LA CUPTOR
- ii coc in tavi tapetate cu hartie de copt unsa cu unt, la 180 C, cam 40-45 minute
IS GATA
- mai intaii ii mananc cu ochii, ca mai apoi sa-i pun la bataie cu intreg familionul
